1 pound broccoli
1/4 cup olive oil
6 cloves garlic, peeled
1 teaspoon salt
Red pepper flakes, optional 
Zest of half a lemon
Salt to taste
Arrange a rack in the middle of the oven and heat to 450°F. Cut the broccoli into bite-sized florets. Cut the stems into diagonal bite-sized pieces. Place in a large bowl.

Toss broccoli, olive oil, garlic - chopped, lemon zest and salt in a bowl.  If desired, add a pinch of red pepper flakes. Transfer to a baking dish and spread in an even layer.  Roast until the broccoli is tender , 12 to 15 minutes.
